Rice & Beans Soup with Maitake Mushrooms

I woke up with my voice all raspy,  a sure sign that winter is coming and I need to bundle up better. I had some leftover jasmine rice from lunch and decided to make a soup of it. I added beans, onions, miso paste, ginger and fried maitake mushrooms in the end. It came out tasting very rich and tasty. Just what the doctor ordered.
