- Vegan Coconut Pudding
I was inspired to make this after tasting LifeThyme’s (Health Food Store in the Village) delicious Coconut Pudding. Mine came out nearly identical! It’s so easy to make vegan coconut pudding and you can experiment with other flavors – pumpkin, chocolate etc.
Ingredients:
- 1 cup of almond milk
- 1/2 a cup of coconut flakes
- 1 spoon of vanilla extract
- 1 box of silken tofu
- 1 spoon of cocoa
- 4 spoons of arrowroot (natural thickener)
- 2 dates
- 4 spoons of sugar
Directions:
Boil almond milk with arrow root thickener. Stir the arrow root powder so that it doesn’t get clumpy. Separately, combine use a blender to combine tofu and dates. Add them to the almond milk and continue to stir. Add the rest of the ingredients and continue to stir until the mixture is as thick as desired. Refrigerate and serve with a handful of coconut flakes on top.
