It’s a been a non-stop but good day in the life of Iguana. Happy to finally settle in and enjoy some pretty good vegan latkes with my roomie to celebrate first day of Hanukah. We have a 6 foot xmas tree in the living room and a new kitty Dixon, who arrived today, thanks to atailatatime.org. There’s lots to celebrate.
Recipe for Vegan Potato Latkes. Combine the following ingredients in a bowl.
- Hand grate 3 potatoes
- Chop half a large onion
- 2 spoons of olive oil
- Spices: I used basil, rosemary, pepper
- Lemon Juice (optional)
- 3 spoons of corn starch
- 4 spoons of white or whole wheat flour. I used both.
- and the secret ingredient in Chinese Chili Garlic Sauce (totally optional)
Use hands to mix up this mixture and add more flour/corn starch if it’s not sticking together. Don’t add too much though!
Fry both sides.
