I’ve been tired more than usual recently..and my good friend reminded that I need to eat healthier – more greens and Alkaline foods. He is right. Ever since moving to Hong Kong, I’ve been taking the easy route and eating too many subway sandwiches (veggie patty in a wrap) because looking for veg food here takes time. So for early dinner, I made this quick dish which turned out really delicious.
Ingredients:
- Buckwheat Pasta
- Red Chard
- Thai Green Curry Paste
- Vegemite
- Brown Mushrooms
- Olive Oil, Apple Cider Vinegar & Salt
To Make: Wash the red chard, break it up into smaller pieces by hand and then simmer it and 2 mushrooms in a pot with 2 spoons of water, olive oil and vinegar for 5 minutes. Then a cup of water and cook buckwheat. Add curry paste, 1 spoon of vegemite and drain in about 8 minutes. *If you add another cup or two of water, this would make a really nice soup!*
